Pasta Fagioli  (Pasta & Beans)

Ingredients:

4 - tablespoons olive oil

1 - large onion - diced

3 - cloves garlic - minced

1 - 24 oz. jar of marinara sauce (I used Francesco Rinaldi)

1 to 2 - cups of water - I put 1 cup and add more as needed.

1/2 teaspoon of dried basil

1/2 to 1 teaspoon of coarse salt (or regular) salt to your taste

1/2 teaspoon of coarse ground black pepper

2 - bay leaves

2 - cans cannellini beans - drained & rinsed

1 cup of pasta - cooked and drained

Serve with a loaf of good Italian bread

 

Optional…..sprinkle with a little grated Locatelli brand pecorino romano cheese on top when serving.

 

Directions:

Boil the 1 cup of pasta.

While that’s cooking put 4 tablespoons of olive oil in large soup pot.  Saute the onion and minced garlic until the onion is translucent.  Add the 24 oz. jar of marinara sauce, 1 cup of water, (add more as needed. I used the 2 cups) 1/2 teaspoon of dried basil, 1/2 teaspoon of salt, (add more to taste. I used 1 teaspoon) 1/2 teaspoon of coarse ground black pepper, 2 bay leaves and stir well.  Add the 2 cans of drained and rinsed cannellini beans and drained cooked pasta.

 

Bring all ingredients to a boil stir well and reduce heat to simmer for about 20/30 minutes, stirring occasionally so it doesn’t stick.   If to thick add a little more water - adjust seasonings to your taste.  Serve with Italian bread and sprinkle with pecorino romano cheese.  Enjoy!!!!!
