Soft Biscotti

Recipe for Soft Biscotti...all basic ingredients!

NOTE:  I make mine Gluten Free.   I use Bob's Red Mill 1 to 1 Gluten Free Flour and just add 1 more egg!   They come out delicious!!!

Bake 325 for 20/25 minutes

Grease 13"X9" glass pan

 

In large bowl beat....

3 eggs (if using Gluten Free Flour add 1 more egg)

3/4 cup sugar

1/4 cup canola oil

1 teaspoon vanilla OR 1/2 teaspoon anise extract

In small bowl mix....

1 1/2 cup flour

1 1/2 teaspoon baking powder

Add the dry ingredients a little at a time to the egg mixture. Stir until all combined and well mixed.  Pout into greased 13"X9" pan and bake at 325 for 20/25 minutes.  The biscotti (it will look like a really low cake that did not rise) will not brown on top....it will be very light in color.   Test with a toothpick to make sure center it cooked.   It should spring back when touched with your finger too.

While still warm you cut 5 pieces, see photo below, and remove to rack to cool.   These pieces you will ice and cut into your biscotti.

Icing.....about 1 cup of powdered sugar and 1 to 2 tablespoon of water.   Add a little water at a time to make a glaze.  If you like sprinkle with colored sugar or other toppings.
