Diana's Gluten Free Roll Out Sugar Cookies

Bake 350 - for 10/12 minutes

Yield depends on the size of cookies you make.

This recipe is great for all occasions that you want to make roll out sugar cookies... Valentine's Day, Saint Patrick's Day, Easter, Halloween,Thanksgiving, Christmas, Wedding or Baby Showers etc.!

Use your favorite cut out cookie shapes. You can sprinkle on colored sugar before baking OR ice them when cooled and decorate as you like!

Ingredients:

1/4 cup butter (1/2 stick) can use Vegan Earth Balance

3/4 cup sugar

2 eggs

1 1/2 teaspoon pure vanilla extract 2 1/2 cups Gluten Free Flour I use either Bob's Red Mill 1 to 1 Baking flour OR King Arthur Gluten Free Measure to Measure Flour

2 teaspoon baking powder

Directions:

In a small bowl put 2 1/2 cups of gluten free flour (Either Bob’s Red Mill or King Arthur’s gluten free flour) and 2 teaspoons of baking powder and mix until well combined….set aside.

In the large bowl of electric mixer….cream 1/4 cup of butter (1/2 stick) and 3/4 cup of sugar until well blended. Add 2 eggs and 1 1/2 teaspoon pure vanilla extract.…mix well.

Slowly add the dry ingredients to the wet mixture and blend until a soft dough forms.

Roll a small piece of dough to about 3/8” to 1/4” thick. Cut out your favorite shapes and place on a parchment lined cookie pan and sprinkle with “any color tinted” sugar OR leave plain and you can decorate with icing when cooled.

Bake 350 degrees for about 10/12 minutes or until light golden brown.

Cool completely before icing. Store in an air tight container,
