Diana’s Gluten Free Roll Out Sugar Cookies (Easter Edition)

Bake 350 - for 10/12 minutes

Yield depends on the size of cookies you make.

This recipe is a great gluten free roll out sugar cookie for all occasions.  Fun to make with your children and grandchildren!  Perfect for all occasions….Valentine’s Day, Saint Patrick’s Day, Easter, Halloween, Thanksgiving, Christmas, Wedding or Baby Showers etc. using your favorite cut out cookie shapes. 

Sugar Cookie Ingredients:

 1/4 cup butter (1/2 stick) can use Vegan Earth Balance

3/4 cup sugar 

2 eggs 

1 1/2 teaspoon pure vanilla extract

2 1/2 cups Gluten Free Flour (I use either Bob’s Red Mill 1 to 1 Baking flour OR King Arthur Gluten Free Measure to Measure Flour

2 teaspoon baking powder

Icing For Sugar Cookies

 2 cups confectioners sugar

1 or 2 tablespoon milk or water. (I use water.)

Optional: 1/2 teaspoon of flavoring - vanilla, lemon, almond, etc.

Assorted colored sugars and sprinkles of your choice appropriate for the holiday/event you are making the cookies for. 

Directions for Cookies:

In a small bowl put 2 1/2 cups of gluten free flour (Either Bob’s Red Mill or King Arthur’s gluten free flour) and 2 teaspoons of baking powder and mix until well combined….set aside.

In the large bowl of electric mixer….cream 1/4 cup of butter (1/2 stick) and 3/4 cup of sugar until well blended.  Add 2 eggs and 1 1/2 teaspoon pure vanilla extract.…mix well.  Slowly add the dry ingredients to the wet mixture and blend until a soft dough forms.

Roll a small piece of dough to about 3/8” to 1/4” thick. It’s important to keep the thickness the same on all your cookies so they will bake evenly.

Cut out your favorite shapes and place on a parchment lined cookie pan. Bake 350 degrees for about 10/12 minutes or until light golden brown.  Cool completely before icing.  

Directions for Icing:

In small bowl put 2 cups of powdered sugar, add 1 tablespoons of milk, or water, and flavoring if using.  Mix until smooth. If too thick add a little more milk or water…..if to thin add a little more powdered sugar.

Now the FUN PART!!!  Ice the cookies and decorate them with your favorite colored sugar and sprinkles. Ice 1 cookie at a time and decorate it before the icing sets or the colored sugar or sprinkles will not stick. I found “candy eyes” and put them on my Bunny Faces…..so cute!!!  Before storing the cookies make sure the icing is completely dry and set! 

I store these in the refrigerator in an air tight container with wax paper in between to keep the cookies looking good.
